I want to make fun foods, sit outside, and soak up the warmth and sunshine. This recipe is perfect for that. Just look at those colors! I used the Turmeric Sweet Potato and Vibrant Beet wraps from Angelic Bakehouse. To be honest, I’m not sure I can make tortilla chips with anything else now. They are just so beautiful and vibrant!!

It’s perfect for the cold days that we are (unfortunately) still experiencing yet still light and bright and ready for spring!
Potatoes are probably one of my favorite foods. And I especially love Yukon golds, which is what I used in today’s recipe. They roast beautifully and have a creamy texture that is absolutely delicious! Scott and I traveled to Switzerland and Lake Como Italy this past October and those beautiful places really inspired this dish.
These chocolate chip almond butter blondies use simple ingredients, can be made in one bowl, and require no additional cooking tools. They cook quickly….and are usually gone pretty quickly too! They have a really nice hint of sweetness but aren’t too sweet which I really appreciate. They are crispy on the outside but gooey on the inside. A delicious and harmonious union between a brownie and a chocolate chip cookie. Is there anything better than that??
