Homemade Whole Food Cereal
Hi, long lost friends! Did you think I forgot about you? I promise I didn't. In fact, the exact opposite - I have been itching to share a post and check in with you. Whew, May was a busy month. Scott and I were out of town 3 of 4 weekends this month and I just couldn't seem to get my blog life organized. BUT! Now, it's June....and I'm BACK!
I have been wanting to share this recipe with you for a while because I have been eating it every chance I get. You know when you find a breakfast you really love and you actually start to crave it? Or when you get super excited when you are going to bed because you know the next meal you have will be THAT breakfast you have been crazy in love with? This bowl is that meal for me.
It's probably the simplest recipe I have ever shared on here. But you know what? I really, really like simple recipes. Sometimes I look at recipes that sound good and have a mini freak out moment because it looks uber complicated or has 2,382,907 ingredients. Ain't nobody got time for that.
This cereal is the definition of a healthy, balanced breakfast (or snack). There is something so incredibly perfect about eating a big bowl of cereal in the morning. On Saturday, I made a big bowl of this, curled up on the couch, and caught up on some recorded shows that I have been neglecting lately. It was everything a Saturday morning should be. And OH! My birthday was on Saturday! I would have been perfectly fine with sticking a candle in this cereal and calling it a day. Special shout out to Scott, my parents, and some pretty awesome friends for making my weekend special :)
Anyway, back to this recipe.
As much as I love cereal, I don't love most of the cereals sold at the grocery store. Why does there need to be so many unpronounceable ingredients and SO MUCH sugar? Even the "healthy" stuff....not impressed.
You might be looking at these pics and thinking...umm...this is just chopped up fruit and nuts....what's so special about this? I'm so glad you asked! This "cereal" is special because it's crunchy, nutty, sweet, and incredibly satisfying. It's also made from 100% real, whole foods. No fake junk in here. The apples and blueberries provide a great source of fruit carbohydrate, and the pecans and flaxseed give us some plant protein and wonderful healthy fats. Not to mention, this bowl is packed with fiber (my fav!). It takes minutes to throw together and is guaranteed to help start your day on the right foot. Oh, and it's also vegan, glutenfree, and paleo friendly. Whoa!
Real food ingredients for the win!
Homemade Whole Food Cereal (vegan, glutenfree, paleo)
Ingredients
- 1 medium apple (I use Fuji), chopped
- 1/4 cup raw pecans, chopped
- 1/4 - 1/2 cup fresh blueberries
- 1 Tbsp ground flaxseed
- 1/2 cup unsweetened vanilla almond milk
- 1 tsp pure maple syrup (optional)
Instructions
- Combine chopped apple, pecans, blueberries, and flaxseed in a cereal bowl.
- Pour in almond milk and drizzle with maple syrup if additional sweetness is desired.
- Enjoy!
